Back again!!!

July 24th, 2007 : Well, I told Libby that I appreciated her including my blog in her list of favorites and promised her that I would start posting again (it's been what - several months since I last posted?). My problem is that in some areas I am terribly "computer illiterate" and this is one area - it took me over 30 minutes to figure out how to post on my blog. And I'll probably forget again the next time I go to post as I have already forgottten how I got to this page! Anyway, I've been quite busy lately. Seems like, even though I don't work, I stay incredibly busy ( a lot of time spent sleeping because of my medical problems), but, my waking hours stay filled. This week, John's (April's fiance) mom and sister are here visiting from Arizona. Yesterday we went to the mall. I remember the fun we had with David, Carrie, Libby & Sadie when I went to the Mall last time they were here! Well, I had fun yesterday too with Abi and Rayna (John's sister - she's 10 years old), we went to Alladin's Castle and they got to play some games and win some cool trinkets and candy. After the mall we went to Books -A-Million and the girls each got to pick out a book. Abi got a Dora the Explorer book that makes sound and Rayna got a really cool book about cats. It was beautifully illustrated and had lots of neat foldouts on the pages. Then we went back to April's and had pizza and salad, then I brought over some of my bead stash and helped Rayna make a necklace to go with one of her sweaters. We had a fun day. Today they went up to Papaw's and had a cookout. I wanted to go but unfortunately my air conditioning is out on my car and it was just TOO hot to ride in it with the windows down. I don't know if it got as hot today as it did yestaerday (I didn't bother to go out and check), but yesterday the temperature reached 104 degrees - Whew!!! Tommorrow I'm going to try to get up early enough to get to the base Auto Hobby Shop to see if I can get it fixed. Well, that's about it for today. I'm going to play a couple of games of ScrabbleCubes online to unwind before bed. (I say a couple, I hope I can play just that many - I'm a ScrabbleCubes JUNKIE - I love the game!)

A Good Recipe

I really like the way Carrie shares recipes on her blog site, so thought I'd share one that's really good.

Sopa Mexicana

Put a whole chicken in a crockpot and cover with water; adding 2 teaspoons of sea-salt (regular salt can be used). Cook this overnight on low. Next morning turn crockpot off; with a wide spoon/ strong utensil, take chicken out carefully and place in a dish to cool. When cool take meat off bones and break apart. When the broth has cooled, strain to get out any chicken particles. Add enough water to the broth to make 2 quarts (or there abouts). Put broth back into the crockpot and add chicken pieces.

To the broth/chicken mixture add

1 28 oz. can of diced tomatoes
1 19 oz. can of enchilada sauce
1 4 oz. can of green chilies, chopped
1 can of Mexican corn, drained
2 teaspoons sea salt ( or 1 1/2 teaspoon iodized salt)
1 scant teaspoon black pepper
2 teaspoons ground cumin
4 tablespoons dried onion flakes
4 large minced fresh cloves of garlic
6 sprigs fresh cilantro (or parsley) - can use dried

Stir all the above ingredients together. Cover and cook in crockpot on low heat for about 4 hours. Serve with then corn chips. Sprinkle with shredded parmesan or cheddar cheese. Serves 6 to 8 people.

Well, everyone, here I go creating my first blog!!! I feel like I am entering a brave new frontier as I still feel a little "computer illiterate". I've had my computer for a little over a year now , but I usually just stick to my old "tried and true" things. I used to have WebTV, which I found much easier to use. All this regular computer stuff is sometimes just a little too much for this old brain of mine. I decided it was time to create a blog though when I saw the wonderful ones that my oldest daughter and "daughter's -to-be" have created. It may take me awhile to get stuff added as I have to get this all figured out first. But, I just wanted to tell everyone HELLO!!!
